Summer and healthy grilled meals

My husband and I took advantage of the warm weather and decided to grill out this evening. This was of course after working out and cooling off in the lake! Here’s the meal that we shared…

Grilled Chicken and vegetables

Boneless chicken breasts
Grill Mates Pork rub
Zucchini sliced length-wise
Vidalia onion cut in half

Sprinkle chicken with rub. (go easy, there is salt in this… and we also use it on Salmon) Place chicken on bottom rack of grill, veggies on top. Grill until chicken cooked through, turning once,  and veggies are crisp tender.
Be sure to make enough for lunch tomorrow! (as always watch your portion sizes)

Summer is such an easy time to eat healthy! We grill out all summer long! It’s easy to keep meals low fat… you don’t need to use oils, and it takes little thought and not much time. Vegetables are easy to roast. Keep them whole (but sliced) or cut them up and wrap in foil. You can season with herbs, olive oil and salt and pepper… but this isn’t necessary.  White corn is in season and can be bought for a reasonable price. We grill them in the husk. It’s naturally sweet and doesn’t need a thing. Other ideas: asparagus, yellow squash, and if you’re up for a starchy carb… red potatoes… skies the limit!
